Delicious Lemon & Raspberry Pie

Today we have a no bake fruit pie which is great for the warm weather and easy to make. The fruit can be substituted for any kind of soft fruit like strawberries, blueberries, mandarins, mangoes etc. Once made, be sure to let it set in the refrigerator for at least 5 hours prior to using. For those from different countries, “instant pudding” is not unlike Bird’s Eye instant whip and the Thais also have their own version.

Ingredients:

1 (8 ounce) package cream cheese, softened

1 (3 1/2 ounce) package lemon flavor instant pudding and pie filling or a 4 serving size

1 cup cold milk

2 teaspoons grated lemon peel

2 cups whipping or double cream, divided

6 ounces of crushed biscuits for the base

1 ounce of butter

1 cup raspberries or other soft fruit

Directions:

Mix crushed biscuits with one ounce of butter and line bottom of dish with the mixture, put in fridge whilst preparing rest of ingredients

Beat cream cheese, dry pudding mix, (there are many Thai versions of this), milk and lemon peel in large bowl until well blended.

Gently stir in 1 cup of the whipped cream.

Spoon onto crust.

Top with remaining 1 cup whipped cream

Refrigerate 5 hours or until firm.

Top with raspberries (or fruit of choice) just before serving. Store left over pie in refrigerator. If preferred, the fruit can be placed on top of the biscuit base first with the mixture on top then trimmed with a little left over fruit
