            New Executive Chef Matthew Woolford has introduced a new menu with signature dishes based on his extensive experience thru Asia and beyond. “A Mez encounter is more of a journey rather than a meal period. Taking traditional Asian Techniques and enhancing flavors that redefine Eastern Cuisine remarks Matthew!

         Ingredients          Quantity              Unit     
King Salmon Sashimi Cut                240             gr
Nori  Power                  80             gr
Extra Vergin Olive Oil                  50             ml
Mangosteen                 200             gr
Rice Vinegar                 100             ml
Korean Red Pepper Power                 100             ml
Sugar                 100             gr
Garlic                  40             gr
Salmon Roe                  60             gr
Mint                  40             gr

METHOD OF PREPARATION

1. Season the salmon and then roll in nori powder

2. Wrap the salmon with cling that has been brushed with olive oil

3. Leave in warm temperature for around 2 hours

4. Simmer the rice vinegar, garlic, Korean pepper powder and sugar together

5. Pour the dressing over the mangos teen, julienne mint and add to the mangos teen

6. Place mangos teen salad on the bottom of a plate, slice salmon and lay on mangos teen

7. Spoon on salmon roe, drizzle olive oil around plate and serve

            Mr. David Cuddon, General Manager of Sheraton Pattaya Resort, has appointed Mr. Matthew Ch’3rles Woolford to be the new Executive Chef of the hotel’s food and beverage department. Mr. Woolford has been working in the food industry for well over ten years with numerous well-known companies and restaurants backing up his extensive resume, his most notable career achievements include opening the W Seoul -Walkerhill Starwood’s first W Hotel in Asia, Chef de Cuisine at the renowned “Restaurant 360″ in Singapore which was voted as one of the “best restaurants in Singapore, and also being a part of the famous “Kables” restaurant within the Regent Hotel in Sydney. 

            A native from Sydney, Australia, Matthew completed his trade certificate in Commercial Cookery at the College Institute of Western Sydney and began his career as Apprentice Chef at Sydney Hilton Hotel, then gaining more experience in and around Sydney in such establishments as the Sebel Townhouse, the Regent Sydney and the Park Hyatt Hotel Canberra. Matthew then decided to broaden his horizons by moving to Asia, and has run kitchens between Phuket, Singapore, Krabi, Bangkok, Seoul and his latest destination in Hong Kong before settling back in Thailand to head the kitchens at the Sheraton Pattaya Resort. 

            Matthew has plans the drive the Sheraton Pattaya restaurants into some of the best culinary experiences in the region by producing simple uncomplicated cuisine that shows true appreciation for the natural product, and wants to promote local Thai products whenever he can. Matthew is no stranger to Thailand feels very much at home as he is married to a Th8i national Sasiwan for the last 8 years and they have a Y.oung daughter Ivy Ploy.

                                 Tartar of Yellowfin Tuna Feta, Sesame and Chives

Sashimi Grade Tuna Lion           240         gr
Fera Cheese            80         gr
Capers            40         gr
Shallots            80         gr
Chives Chopped            40         gr
Olive Oil          200         ml
Sesame Oil            20         ml
Soy Sauce            20         ml
White Sesame Seeds            10         gr
Black Sesame  Seeds            10         gr
Daikon Sprouts or fine Daikon Julienne            30         gr
EV  Olive  Oil            20         ml
Mint Juliene            40         gr

METHOD OF PREPARATION

1. Dice the tuna into small dice, set aside

2. Fry the capers and shallots in olive oil until crispy

3. Mix the tuna, chives, capers and shallots together

4. Season with the soy, and sesame oil

5. Add the cheese and place in ring in the centre of plate

6. Mix mint julienne and daikon together and garnish the top of tartar

7. Sprinkle with sesame seeds and drizzle with olive oil and serve

            One of the most beautiful festivals that takes place in Thailand is the one for Loy Krathong. This is celebrated on the full moon in November. The word lay means to float, and a krathong is a banana leaf cup. People place a candle and incense sticks in their krathongs and then float them on a local river or pond. As they push away their krathong, they ask for forgiveness in polluting the waterways and also for good luck in the coming months.
