Nourishing “One Pot” Vegetarian Curry

This tasty vegetable curry is nourishing and filling, as well as quick and easy to prepare Ideal for those on the go who have little time to cook. Ingredients are available in Friendship as well as other leading supermarkets.

1 tbsp oil

1 onion, roughly chopped

3 cloves garlic crushed

1 large sweet potato, chopped into small chunks

500 gms pumpkin chopped into small chunks

1 carrot chopped into small chunks

1 aubergine, trimmed and chopped into chunks

250g button mushrooms

2-4 tbsp curry paste (depending on how hot you like it) or one heaped

teaspoon curry powder

150ml vegetable stock (or 150ml water with 2 vegetable stock cubes)

400ml can coconut milk

Chopped coriander, to serve


Heat the oil in a large saucepan, add the onion, garlic,  sweet potato and pumpkin.  Cover, then cook over a low heat for 5 mins until the potatoes start to soften. Throw in the aubergine and mushrooms, cook for a further 5 mins.

Stir in the curry paste, pour over the stock and coconut milk. Bring to the boil, then simmer for 10 mins or until the potato is tender. Stir through the coriander and serve with rice or naan bread.

Alternately, place all ingredients (except the coriander) into slow cooker and leave to cook on high for 2-3 hours or low for 5-6 hours.  Stir in coconut milk and coriander before serving.
