DOLCELATTE AND SWEET PEAR SALAD

Dolce latté, which means ‘sweet milk‘, is a mild and creamy blue veined cheese with a sweet yet tangy flavour. It combines well with sweet, ripe pears and peppery watercress. This salad is quick to make and should be assembled just before serving as a starter for entertaining, or an accompaniment to cold meat.

(1) Halve the pears and remove the core with a knife. Cut each half into 8 slices and place in a large bowl.

(2) Make the dressing in a small bowl. Whisk together the apple juice, olive oil, chives and black pepper, and then pour over the pears.

Drink: the creamy texture of this salad is enhanced by a wine with a touch of sweetness such as Sauvignon.

Cook’s tips: the cheese can be broken up into small pieces, using your hands, if preferred. Ensure that you use ripe pears for this dish. An easy way to finely chop the chives is to bunch them together and snip into small pieces with a pair of sharp kitchen scissors.
