Chinese Sweet & Sour Rat

Recipe calls for two or three large, restaurant quality rats. Many smaller rats or mice can be substitute.

1-1.5kg of restaurant grade rat meat

1 onion diced

2 cloves garlic crushed

1 cup pineapple chunks, fresh whenever possible. Do not drain.

¼ cup sesame oil (can use Hot Sesame oil for zest)

1 yellow or orange bell pepper sliced thin (or green)

1/2 teaspoon salt

Put aside 1½ tablespoon cornstarch for thickening sauce

1 dessertspoon sugar

1 cup pineapple juice fresh squeezed if possible, but ready to drink is OK.

¼ cup vinegar plus ½ cup water


Heat a large, flat pan to brown rat over modest heat. Add onions and garlic, fry slowly until onions become transparent. Season with salt & pepper. Add pineapple juice and vinegar. Cover and cook over low heat for 30 minutes. Mix cornstarch and sugar with drop of water and stir in slowly and thoroughly into the liquid. Once sauce thickens, the rat is ready for serving with steamed or fried rice.
