CARIBBEAN RED PEPPER SALSA

Preparation time: 20 minutes
Serves: 4

244 kcal/7.2g fat per serving

For the dressing:
2 tbsp vegetable oil 1 clove garlic, crushed 3 tbsp red wine vinegar Juice of 1 lime 1 tsp hot pepper sauce ‘A tsp Worcestershire sauce 1/4 tsp ground cumin 1 tsp caster sugar Salt and freshly ground black pepper.

For the salsa:
410g can red kidney beans, drained and rinsed 1 cucumber, chopped 195g can sweetcor n, drained 250g fresh tomatoes, chopped 4 salad onions, finely chopped 1 red pepper, deseeded and chopped 4 tbsp chopped fresh coriander


(1) Whisk the dressing ingredients together and pour into a large salad bowl.

(2) Prepare the salsa ingredients and toss in the dressing.

(3) Leave to stand for one hour to allow the flavours to develop.
